A killer spring recipe!

Katrina's Orechiette with broccoli and prosciutto (with almost entire thanks to Antonio Carluccio!)  

This is one of the weekday fallbacks in our house – so easy to make and tremendously delicious. Please note that because there are so few ingredients, they MUST be the best quality you can afford/find or else the whole dish may end up being a little lackluster!

While Mr Carluccio’s ‘official’ recipe is here – I’d stay away from the quantities he suggests, because for a Greedy Italian he’s a little restrained on the good bits!

Turns out that perhaps I’m the greedy one instead!


  • 100g prosciutto – ideally sliced rather thickly at a good deli and then roughly diced by you, but at a pinch you can get away with a packet slices of Serrano ham, jamon or good prosciutto. Cut these into finger-width pieces.
  • 2 cloves of garlic thinly sliced
  • 1 chilli finely diced (add more if you’re a spice fiend)
  • A punnet of really good quality, extremely tasty cherry tomatoes – cut in half
  • A medium head of broccoli separated into smaller bits (you’ll be surprised how much more you enjoy it when it’s not just boiled to oblivion!)
  • Finely chopped parsley – about a small handful
  • Orechiette pasta (not always easy to buy, so when you see it, buy it – and pop it into the pantry until you’re inspired to cook this!). It’s usually sold in 500gm packets, but I’d recommend using around 300-400gm.
  • Good parmesan, salt and pepper and olive oil (always!)
  • (this is of course how we like it in our household – as it’s a pretty forgiving dish, feel free to play with the quantities to your preference!)


It’s a tad unconventional, but I’d start cooking the pasta first – given its thickness, orechiette usually requires a bit longer than normal pasta to cook and you don’t want to overcook the good stuff while waiting for the pasta to cook!

·  Boil some well-salted water and add the pasta according to the instructions

·  Heat a generous slurp of olive oil in a relatively deep frying pan and fry the prosciutto for 2-3 minutes until all is golden and smelling outrageously delicious;

·  Add tomatoes, garlic and chilli and cook until the tomatoes have softened a little (usually a couple of minutes);

·  Add broccoli and a good spoonful of salted water from the pasta to give it a bit of steam then cover for up to 5 minutes (don’t let this go too long as you don’t want the mixture becoming squishy – the delight in this dish is the variety of textures)

·  Stir in the parsley

·  Add the drained pasta to the frying pan

·  Season with salt and pepper to taste and then serve

·  Add your parmesan (at least grana padano or better) now if you like

Buon appetito! Seriously easy and seriously delicious!
